Girls' Night Out!

We had a great girls' night out!
Dan, thank you for taking the sisters around in the limo.
Annie, thank you for making the delicious dessert.
Sisters, thank you for coming!

Blue Ribbon Cream Puffs
Ingredients:

Shells
1/2 C butter
1 C sifted flour
1 C water
1/4 tsp salt (less if using salted butter)
4 large eggs

Filling
8oz softened cream cheese - I like Philadelphia the best (leave out of fridge for 2 or more hours before using)
1/2 - 1 C powdered sugar
2 cups whipping cream
1 vanilla bean - seeded (or 1 tsp vanilla extract)

Directions:
Shells
1. In medium sauce pan, slowly bring water with butter and salt to boiling. Remove from heat.
2. With wooden spoon, beat in flour all at once. Return to low heat, continue beating until mixture forms a ball and leaves side of pan (will probably take less than a minute)
3. Remove from heat. Beat in eggs one at a time with an electric mixer. Beat each egg until mixture is smooth before adding the next one.
4. Continue beating until dough is shiny and satiny and breaks in strands (this takes about 8-10 minutes).
5. Drop by rounded tablespoonfuls 2 inches apart, onto an ungreased cookie sheet.
6. Bake at 400 degrees for 30 minutes until puffed and golden brown. They should sound hollow when tapped with fingertips.
7. Cool completly on a wire rack, away from drafts.
8. With a sharp knife, cut off tops. Remove any pieces of soft dough inside.

Filling
1. Beat softened cream cheese until smooth. Add vanilla and powdered sugar. Beat until softened.
2. Add whipping cream all at once. Beat until whipped.
3. Fill shells and replace tops
4. Sprinkle with powdered sugar.

Variations:
Chocolate: Make filling as directed. In a separate microwavable bowl add 1/2 C Chocolate chips and 1 T milk. Microwave for at 15 second intervals, stirring after each time until melted. Allow to cool some. Add to whip cream and beat again until mixed. After filling each puff, top with a chocolate icing (melt some more chocolate and milk (about 1/3 as much as before), add more milk (a few drops at a time) and powdered sugar until able to drizzle over the top of cream puffs.

Berry: Make filling as directed. Add 1/2 C thawed or fresh berries and beat until mixed. Fill each puff. Top with berry icing made from berry syrup and powdered sugar. Thin using water until able to drizzle on top of cream puffs.

Farewell

Hey Sisters. I have enjoyed being apart of such a wonderful RS presidency and planning enriching activities for Relief Society. I love all of you and am so excited for the new Relief Society Presidency. They are all amazing sisters that are going to do an awesome job. I am excited to pass everything on to Rachel and Kate. Hopefully we can figure out how to change blog administration into their care. I hope that the blog works well for you as it has for me. It has been a fun way to keep everyone up on activities.

Successful Meal Planning

April 14th, 2009

For April Enrichment we will be focusing on our Homemaking Skills by learning techniques to successful meal planning. By planning ahead we will be able to improve the nutritional quality of our diets and ensure that the best foods are being served to our families. Through meal planning we can establish a pattern of healthy food choices each week by providing a range of features to make planning healthy and doable meals easier, such as shopping lists and successful use, and rotation, of food storage.

We have a guest instructor, Denise, coming to teach us how to plan meals in advance and how to incorporate our food storage successfully. Denise Paikuli is the Early Childhood Specialist at Building Blocks Child Care Center. She oversees the kitchen at the center and is VERY knowledgeable about the USDA food program and incorporating healthy foods in meal planning. In her own life she is a mother of three and is very successful in incorporating this into her home.
Along with the meal planning "Chef" Ericka Young and a special contestant will present us with a "Food Show" by competing to show us how to incorporate our shopping lists into our planned meals of the week. This means that we get to sample their work!!!
We are excited to have Denise speak with us and participate in our own PU2 Food Show. Come and enjoy a fun evening and learn, or teach us what you know.

On Thursday, the 19th, there will be forms at the door to write what services you are auctioning off. There will also be a questionnaire to fill out to earn the points to use to buy goods and services auctioned. It is going to be an enjoyable evening with fun, laughter and service. We hope to see all of you there.

Give Your Heart In Service

Proverbs 31:20-She stretcheth out her hands to the poor; yea, she reacheth forth her hands to the needy.

February is a "heartfelt" month to reach out to one another and serve. We each have wonderful opportunities to serve one another and this month we want to give service at a SERVICE AUCTION.

For those of you who have never been to a Service Auction, sisters volunteer services. Last year a sister volunteered to clean bathrooms; another volunteered her professional services for a massage; another free hair cut; manicure; some brought cookies and pies to auction off, movie ticket packages, game night, blankets and so forth. There is a form of questions, like "did you read your scriptures today?" (20 points), "did you make your bed?" (15 pts) where the sister get the points to use to buy the services. Start thinking of talents, and services that you could provide to auction off. Let's have some fun while we serve one another.

The carpets are being cleaned on our regular Enrichment night so the tentative date is:

Welcome 2009! Let Us Celebrate A New Year Of...

* Greater opportunities
* Spreading love
* Making new friends
* Sharing the gospel

* Accomplishing goals
* Drawing nearer to God and Jesus Christ

You name it sisters. They are your goals whatever they may be. They will be your accomplishments. The new year is not only leaving the old behind but a time to reflect on the past and prepare for the journeys ahead.

Elder Joe J. Christensen of the Presidency of the Seventy spoke on Resolutions in the December 1994 Ensign. He wrote: “While many of us take seriously our New Year’s resolutions, some of us may not have made any because of our prior problems in keeping them. We must not overlook the power that making good resolutions can have in helping make our lives happier and more successful—regardless of our past performance.”

Resolutions should be made to improve ones self. To increase in knowledge, health, happiness, spirit and prepare for the future. We find that even the Savior continued to increase wisdom and stature. “Only one verse of scripture in the entire King James Version of the New Testament suggests what the Savior did to develop himself from age twelve until he began his formal ministry at age thirty: “Jesus increased in wisdom and stature, and in favour with God and man” (Luke 2:52; see JST, Matt. 3:24–26). In other words, the Savior developed in the same areas indicated on the poll: intellectually (in wisdom and knowledge), physically (in stature), socially (in favor with man), and spiritually (in favor with God)” (Joe J. Christensen, “Resolutions,” Ensign, Dec 1994, 62–67).


Elder Christensen is convinced that “if we make and keep resolutions in those four areas, we will have a happier and more successful new year this coming year and every year for the rest of our lives. Let’s consider the nature of such resolutions and the benefits that can be ours if our resolve to improve ourselves is firm.”


We are excited to start a new year with each of you. To help us celebrate and prepare for 2009 we are going to, YES, you guessed it…be setting reachable goals!!!
